1. Thai Coconut Chicken Soup (Tom Kha Gai)

  • Ingredients:
  • 2 cups coconut milk
  • 1 cup chicken broth
  • 1 lb chicken breast, thinly sliced
  • 1 stalk lemongrass, cut into 2-inch pieces and smashed
  • 3 slices galangal (or ginger if unavailable)
  • 3 kaffir lime leaves, torn
  • 2-3 Thai chilies, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Salt to taste
  • Instructions:
  1. In a pot, combine coconut milk and chicken broth. Bring to a simmer over medium heat.
  2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. Add chicken and mushrooms, cook until chicken is cooked through.
  4. Stir in fish sauce and lime juice. Adjust seasoning with salt if necessary.
  5. Garnish with fresh cilantro before serving.

2. Coconut Curry Soup

  • Ingredients:
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons red curry paste
  • 2 cups vegetable broth
  • 2 cups coconut milk
  • 1 cup diced sweet potatoes
  • 1 cup sliced carrots
  • 1 red bell pepper, sliced
  • 1 cup baby spinach
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • Instructions:
  1. Heat coconut oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.

  • 1 teaspoon turmeric
  • 1 cup red lentils, rinsed

  • 1 can coconut milk
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup chopped spinach
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Instructions:
  1. Heat coconut oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Add cumin, coriander, and turmeric. Cook for another minute.
  3. Stir in lentils, vegetable broth, and coconut milk. Bring to a simmer.
